Staff recommended assessing a $1,750 penalty against El Guadalajara (301 W. Lusher Ave.) for a second fats, oils and grease (FOG) exceedance within a rolling 12-month period. Steve Brown said the enforcement response plan recommends $1,500 for a second offense plus $250 for exceeding the limit by more than 20%, totaling $1,750.
Restaurant representative Jesus told the board they had cleaned the grease trap and changed haulers, and that he had receipts showing regular cleaning. "My name is Jesus. I'm here for Guadalajara," he said. The board decided to table assessment of the fine, directed staff to meet the owner at the next pump-out to observe procedures, and stated no fine would be imposed at the July 21 meeting.
