MSU Extension staff told commissioners they are expanding food-safety and preservation outreach across Sanilac County, using online and in-person formats.
"So our goal with our food safety education is to reach a wide variety of audiences," said Laurie Messing, a food-safety extension educator. Messing described recurring programs including ServSafe certification for food-service managers, online home-food preservation classes ("Preserving My Harvest") and cottage-food-law guidance for entrepreneurs seeking to sell home-produced items at markets.
Messing said programs run year-round online with supplemental in-person sessions at libraries and community partners; she noted particular interest in seasonal topics such as salsa, sweet corn and preserving venison. She also described outreach to farmers markets, baby-shower events and county displays to promote training and resources.
The board asked for clarifications about who the programs serve and how county residents can find classes; Messing pointed attendees to extension schedules and partnerships with local libraries and health-department displays.
