Student advocate tells Prosper council expanding plant‑based school lunches could improve access

Kiati Doda, an incoming sophomore at Richland High School and a member of the Plant Powered Youth Fellowship, told the council she wants Prosper ISD to expand plant‑based meal options so students with religious or dietary restrictions have reliable choices.
"Only 30% of students actually purchase lunch at schools," Doda said after describing a friend who could not eat meat, eggs or certain cheeses and therefore struggled to get enough to eat. Doda said expanding plant‑based options could improve participation and inclusion and cited recent advocacy in Washington, D.C., where she met with congressional staff as part of the fellowship.
Doda asked the council to consider local-level dialogue with the school district and food service staff; the council did not take formal action but recorded the request as public comment.
