Coldwater of Lee’s Summit seeks funds to expand produce boxes amid rising demand

Sarah Knight, executive director of Coldwater of Lee’s Summit, told the Jackson County Budget Committee that her food pantry and clothing closet serve households across Jackson County and have seen a jump in demand since late 2024. "We serve all of Jackson County," Knight said, and described Friends Day distribution that currently provides a 15‑pound produce box to many families.
Knight said Coldwater served roughly 400 families per month in 2025 but is nearing 600 families this month, noting pressure from SNAP cuts and sustained need. Her presentation focused on nutritional improvements — including adding milk and more produce — and asked legislators to consider grants that would increase the number of produce boxes stocked on Friends Day to support clients’ health and food dignity.
