The Galesburg City Council on April 7 approved an ordinance amending Chapter 113 of the municipal code to add a Class A-1 liquor license for Fisk Beer and Wine LLC at 240 East Simmons Street.
City Manager Eric Hanson told the council staff recommended approval and that Fisk Beer and Wine "will operate a full bar with a curated beer and wine list, offer a small food menu of shareable items and retail package beer and wine." Council moved to suspend the rules so the business could start ordering from distributors; the motion to suspend the rules and to consider the item on second reading passed on a 5–0 roll-call vote.
Councilmember Cheeseman emphasized that this is not a package-liquor use but a restaurant-style operation that will "add much more to our downtown area," and the council approved the ordinance on second reading by the same 5–0 margin.
What happens next: The license addition clears the way for Fisk Beer and Wine to place distributor orders and pursue a planned May opening; the business and staff will follow licensing procedures with the liquor commissioner and city clerk's office.
Provenance: Discussion and staff presentation began at the ordinance's introduction and continued through the suspension and vote sequence recorded in the meeting transcript.
