Commission delays Paleteria LaRosa food-truck permit until required owner permission is provided

The Riverton City Planning Commission on Aug. 28, 2025 voted to continue the conditional-use permit application for Paleteria LaRosa (PLZ25-2039) to the Sept. 25, 2025 meeting at the applicant's request and because required documentation was missing. Commissioner Keel moved to continue the item and Commissioner Clough seconded; the motion passed unanimously.
City staff explained the proposal is a home-occupation request for a food truck that the applicant intends to store behind a residential gate and use for occasional restocking and sales at other locations. "According to our code, they can't be in the city… they can't sell in our city for more than 90 days," said Lisa, the staff presenter, noting additional limits on vending in residential areas and that the applicant had not supplied a required letter from the homeowner (the property is rented and the owner was reported to be out of the country).
The applicant, identified in the meeting packet as Christian Altamiriano, was aware the application would be continued until the Sept. 25 meeting so the city could receive the owner's permission letter and any remaining materials. The commission did not take final action on the conditional-use permit at this meeting.
