Jennifer Mertz guided participants through a simple Israeli chopped salad and a traditional street-style beverage. For the salad she recommended chopping tomatoes, cucumber and green onion into even, bite-sized pieces and tossing them with a lemon vinaigrette made from two tablespoons of olive oil and lemon juice to taste.
Mertz said the drink is called "Shoko Beisakit" and explained the cultural form: "Shoko Beisakit. Shoko Beisakit. And it means, in Hebrew, chocolate milk in a bag." She demonstrated a quick version using 1 cup of milk with 1/3 cup cocoa powder, 2 tablespoons brown sugar and a pinch of coriander as a spiced chocolate base, then adding the remaining milk to serve.
