Council approved Ordinance 1098 (second reading), amending Chapter 4, Article 4.900 "Food service Establishments" by adding section 4.911 "Grease Interceptors and Waste Disposal" and section 4.912 "Installation and Maintenance Requirements for Grease Interceptors." The ordinance is intended to protect the sanitary-treatment system from fats, oils and grease produced by food service operations and is based on TCEQ model language and chapter 10 of the International Plumbing Code.
The minutes state the change was approved on second reading as part of the consent agenda. Staff indicated the proposed ordinance fills a gap in the current Code of Ordinances where traps were previously addressed only under Article 11.1300 (Industrial Waste).
