Steve Brown, public works (speaker 8), described an on-site visit, noting the restaurant had warning signs over sinks and records of cleanings, and staff recommended dry-scraping cookware and coordinating interceptor and manhole pumping to reduce grease discharge. "We recommended that they dry scrape the cooking ware and utensils into the trash prior to washing those utensils," Brown told the board. A public commenter who identified himself as Johnny (speaker 9) said the restaurant is small and reported daily sales around $500, asking the board to consider the business's size when assessing penalties.
