Trustees approve Dom's Dogs registration for downtown Peotone; owners plan summer opening

Dominic Caesar introduced himself and his wife, Rhiannon Caesar, and described plans to open Dom's Dogs at 908 West Wilmington Road. He said the owners trained with Vienna Beef and plan a menu of Chicago-style hot dogs, sandwiches, ice cream and possibly pizza, plus outdoor seating and a reopened drive-thru. "We're we're kicking that around that idea right now," he said of the pizza option.
Trustees noted liquor and gaming licenses are separate applications and not before the board tonight. The motion to approve the new-business registration was moved by Trustee Marepka, seconded by Trustee Richards, and passed on a roll-call vote. The owners said they hope to open in April or May and initially hire four to five employees.
