Applicants told the commission they plan a ventless hood system for the proposed kitchen because rooftop grease piping is unworkable given the building's occupied upper floors. A technical representative explained the ventless system uses a three-filter arrangement with an inline exhaust fan and said the approach "functions and operates the same" as a traditional hood system for kitchen needs.
